Lentil and Spinach Salad
Enjoy this refreshing and healthy salad rich in protein, iron, vitamin A and C. It is quick and easy to make, low in calories, and full of mediterranean flavors.

1 cup brown lentils
2 cups spinach
1/2 cup feta cheese, crumbled
3 table spoons extra virgin olive oil
2 table spoons balsamic vinegar or fresh lemon juice
1 red bell pepper
1 large or 2 medium size tomatoes
1/4 cup sliced almonds
Sea salt & black pepper
Wash the lentils really well, put them in a pot, and add one and half cups of water and a pinch of salt. Cook for 15 to 20 minutes till the lentils are cooked but not mushed.
While the lentils are cooking, dice the red pepper and sauté very lightly. Dice the tomatoes. Wash and drain the spinach, then put it in a bowl. Add the lentils and all the other ingredients. Add the extra virgin olive oil, the vinegar or lemon juice, and a pinch of salt and black pepper. Mix everything, then sprinkle the sliced almonds on top.
