Chia Fruit Parfait

This parfait is simple, tasty, and very refreshing. The fruits balance the rich chia pudding perfectly. It is not only gorgeous to look at but also a real treat to the senses! Make it a true macrobiotic dessert by using brown rice syrup and organically grown fruits. Chia seeds are high in fiber, protein, and omega-3 fatty acids. They help control and lose weight, support healthy bones, fuel performance, and lower the risk of heart disease and type 2 diabetes. Are you ready?


2 tablespoons chia seeds
½ cup coconut milk
1 tablespoon brown rice syrup
1 cup mixed fruit
Nuts (optional)

Cooking directions

To make the chia pudding, put the coconut milk and brown rice syrup in a bowl and soak the chia seeds in it for at least 20 minutes or till it thickens. Stir in between to avoid lumps.

To assemble the pudding, put a spoonful of the chia pudding in a dessert cup and layer the fruits on top of it. Repeat the procedure till the cup is full. Add nuts to decorate if desired. Enjoy this Chia Fruit Parfait cold.
