Quinoa has been declared a food of high nutritional value by the Food and Agriculture Association of the United Nations (FAO). It has been an important crop since the Inca Empire where Quinoa was called the “mother of all grains”. Quinoa is rich in protein, fiber, manganese, and magnesium. It is the perfect source of protein for vegetarians.
Ingredients
1 cup quinoa
1 cup sliced carrots
1 cup shelled edamame beans
1 can organic whole kernel corn
1 cup diced red bell pepper
1/4 cup olive oil
Cooking directions
Put the quinoa in a strainer and rinse. Boil 2 1/2 cups of water and add the quinoa, the carrots, and the edamame. Season it to your taste, add the olive oil, and cook for about 15 minutes till all the water is absorbed and the quinoa has become translucent. You can replace the water with organic chicken broth if desired. While the quinoa mixture is cooking, sauté the red pepper and corn lightly. Put the quinoa in a serving dish and top it with the red pepper and corn.
