These fluffy rice cakes are a delectable treat, visually and to taste. They are made from fermented batter, which makes its nutrition readily available to the body. Idlis make a healthy, protein-packed breakfast or snack. This steamed beauty is soft and spongy and is bound to be loved by all.
Ingredients
For the idlis:
1 cup oat flour
1/2 cup semolina
3 coriander leaves
5 curry leaves
Salt to taste
Water as required
For the seasoning (optional):
1 tsp coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
1 pinch of asafetida
3 curry leaves
Cooking directions
For the idlis, blend the dry ingredients in a big bowl and add water to bring the batter to a pancake mix consistency. Cover and leave in the fridge overnight to ferment. The following morning, pour the batter into greased moulds on an idli cooker or use any moulds you can put in a steamer. Steam for 8-10 minutes.
For the seasoning, heat oil in a pan and add the mustard seeds, cumin seeds, curry leaves, and asafetida to the oil and lightly fry for 10 seconds. Once the idlis are cooked, put them on a serving dish and pour the seasoning over them.
