Spinach Pie

Spinach is a great source of potassium and iron. It also contains calcium, magnesium, vitamin A, and protein.

Spinach Pie

Ingredients

2 pounds fresh spinach, chopped
1/2 cup ricotta cheese
3/4 cup crumbled feta cheese
1 package puff pastry, thawed
1 large onion, chopped
4 cloves garlic, minced
Pinch of pepper
Olive oil

Cooking directions

Sauté the chopped onion with some light olive oil till they become translucent and golden. Add the spinach and the garlic and sauté them together. Then put the mixture in a bowl and add the feta and ricotta cheese. Add some pepper and mix.

Lay one sheet of puff pastry - that you have already thawed - on the bottom of a casserole dish, spread the spinach filling evenly on top, then add another sheet of puff pastry. With a sharp knife or pizza cutter divide the pie to squares. Make sure that you don’t cut through the puff pastry but just mark the place that you want to cut later. Pre-heat the oven to 375 and cook for 45 minutes.

Serves 6 persons
