White beans, like all other beans, are rich in protein and fiber. White beans are also a great source of minerals such as Magnesium, Potassium, and Calcium. Celery is a low calorie herb packed with vitamins A, K, C and folic acid.
Ingredients
2 cans low sodium white beans
2 cups sliced fresh celery
1 cup chopped cilantro
3 medium size Granny Smith apples
1/2 cup sliced almonds
1/4 cup yogurt
1 table spoon extra virgin olive oil
1 tea spoon mustard
Pinch of salt
Pinch of cayenne pepper
Cooking Directions
For the sauce, mix the yogurt with the mustard. Add the olive oil, salt, and cayenne pepper to your taste and put aside.
Drain and rinse the white beans with cold water. Wash and slice the celery. Wash and chop the cilantro. Wash the apples. Peel non-organic apples and cut them into small squares. (If the apples are organic, you can keep the skin.) Put all the ingredients in a bowl, add the yogurt sauce, and mix well. Sprinkle the sliced almonds on top and serve. Enjoy!
