This is a low calorie and healthy dish. Sweet potatoes are an excellent source of beta-carotene, fiber, vitamin A, C, E, B6, and manganese and are good for regulating the blood sugar level.
Ingredients
1 pack of organic skinless boneless chicken thighs
2 medium sweet potatoes
1 large onion
4 zucchini
Fresh rosemary or 1 tea spoon rosemary powder
1 can of low sodium tomato sauce
Cooking Directions
In a large saucepan sauté the onion and the chicken thighs. Cut the sweet potatoes and the zucchini in cubes and sauté lightly, then add them to the chicken and onion.
Open the can of tomato sauce and pour it into the saucepan. Add a pinch of sea salt, some pepper, and the rosemary. Pour a cup of water over the chicken and vegetables, bring to boil, reduce the heat to medium, and let it cook for 20 minutes. Serve and enjoy.
