Wild Rice and Shiitake Mushrooms

Wild rice is the seed of a native North American marsh grass. It is gluten free and rich in protein and fiber. Wild rice also contains B vitamins and important minerals such as Zinc and Potassium. Shiitake Mushrooms are an excellent source of minerals including Selenium, Niacin, Copper, and Manganese.

Ingredients

1 cup wild rice
3 cups low sodium broth or water
2 cups sliced Shiitake mushroom
1 cup diced red and yellow bell peppers
1/4 cup chopped parsley
Pinch of salt
Pinch of pepper
1/2 tea spoon Italian seasoning

Cooking Directions

Wash the wild rice and put it in a pot with the 3 cups of broth or water. Add salt and pepper and the Italian seasoning and bring the rice to boil. Lower the heat to medium and let it simmer for 45 minutes. Check the liquid. When it is almost gone, add a little oil of your choice  and fluff the wild rice with a fork. Then lower the heat again and let it cook for another 10 minutes till there is no liquid left. Remove the pot from the heat.

While the rice is cooking, put the sliced mushrooms in a sauce pan and sauté lightly. Wash and dice the bell peppers, then sauté them lightly. Mix all the ingredients together and add the chopped parsley. Serve and enjoy.
